Semolina Aluwa






Ingredients:
250g fried semolina
150g coconut
400g brown sugar
chopped
cardamom 
1 tea spoon vanilla
1/3 cup of water
1/2 cup of cut cashew 





Steps:
1.Pour water into the sugar and heat until sugar melt.
2.Now you can see sugar honey when honey makes bubbles add coconut, cardamom, vanilla and cashew.

3.Cook for 2 minuets.
4.Put little amount of semolina to a board.
5.After the gas is offed add other semolina if the mixture is
unstable add some more semolina.
6.Now immediately put the mixture on the board and thin the mixture put some semolina on the top of the thinned mixture.
7. Now cut it into pieces. Don't wait to cut pieces until it is tight.


                              Sri Lankan POL SAMBAL

Ingredients:

1 fresh coconut
1/2 red onion finely diced
1 limes
1 tbsp of chili powder 

2/3 tbsp dry fish powder 
salt
pepper powder
chilly flakes



Steps:


1. Crack the coconut in half and scrape the coconut.
2.Add chilly powder, some chilly flakes,salt,pepper powder, dry fish powder and onion into the
mortar and grind them for a paste.
3.Add the scraped coconut into the mortar and mix it with grind paste.
             *IF you don't have mortar use a grinder BUT be careful don't grind too much because it'll turn into juice or else just mix the ingredients by hands.
4.Take the paste out of the mortar and put it into a plate.
              *Now the paste should be reddish.
5. Add the lime juice.
6. Mix well.
7.If you want add some chilly powder,salt or lime and mix a little more.
8. Here your dish is ready. Serve! 



NOTE:
      You can have the sambal with bread,string hoppers,rice.
